Method Preheat oven to 190 C. Place the sweet potato on a baking tray lined with non-stick baking paper and drizzle with a little olive oil, salt and pepper. Cook for 10 minutes. Add the tomatoes to the baking tray, drizzle with a little more oil, and season with salt and pepper. Cook for a further 15 minutes or until the sweet potato and tomato is tender

1 cups orzo (about 9 ounces)
cup olive oil
3 tablespoons lemon juice
1 clove garlic, minced
1 15-ounce can chickpeas, drained and rinsed
2 tablespoons chopped fresh oregano
Salt and freshly ground black pepper, to taste
1 5-ounce log goat cheese, crumbled
